How To Make A Healthy California Egg White Sandwich

Unlike the yolk of an egg, egg whites have no cholesterol and are low in calories. 
Egg whites are packed with nutrients and offer several health benefits such as being high in protein (4g of protein in a single egg white), low in calories and no fat. 
A single egg white includes a supply of folate, selenium, calcium and magnesium, and phosphorous. 


California Egg White Sandwich
Ingredients:
2 egg whites
2 slices fully cooked Turkey Bacon
1 Tbsp. Low Fat Ranch Dressing
1 tsp. hot pepper sauce
1 whole wheat English muffin toasted
Avocado slices
Directions:
In a microwavable bowl whisk egg whites until blended.  Microwave on a high setting for approx.  30 seconds, until whites are set (stir every 15 seconds). 
Place turkey bacon on microwaveable plate and cover with paper towel.  Microwave for approximately 30 seconds.
Mix together the ranch dressing and hot sauce and spread onto toasted muffin halves and fill with the eggs and turkey bacon.  Top with avocado slices.   Enjoy!

How To Make Delicious Brussels Sprouts with Bacon and Toasted Pecans


Eating cruciferous veggies on a regular basis like the Brussells Sprout (which gained its name from the town of Brussels, Belgium) helps to protect our bodies from various cancers such as breast, prostate, and lung cancer.  Packed with vitamin C, and K-1, this superfood has only a few calories per serving and is a good source of Vitamin A (beta-carotene) a must-have for healthy skin.  

Brussels Sprouts are the ideal vegetable to consume in the winter as this is their growing season.

  •  Ingredients
    • 1 pound thick-cut bacon
    • 2 pounds Brussels sprouts, trimmed and halved through the stem
    • 2 tablespoons extra virgin olive oil
    • 1 teaspoon kosher salt
    • 1/2 teaspoon freshly ground black pepper
    • 3 tablespoons unsalted butter
    • 2 cups coarsely chopped pecans
    • 1 tablespoon lightly packed light brown sugar
    • 1 teaspoon garlic salt
    • Balsamic Reduction to taste (recipe follows; see Cook’s Note)
  • Balsamic Reduction:
    • 1 cup balsamic vinegar
Directions
  1. Preheat the oven to 400°F.
  2. Arrange the bacon slices on 1 or 2 separate baking sheets. Bake until crispy, about 20 minutes. Line another baking sheet with paper towels and transfer the bacon to the paper towels to drain. Chop crosswise and set aside.
  3. Meanwhile, toss the Brussels sprouts with olive oil, salt, and pepper. Arrange on a rimmed baking sheet cut sides down. Roast until browned and the edges are crisp, about 30 minutes, shaking the pan occasionally.
  4. In a large sauté pan or skillet, melt the butter over medium heat. Add the pecans, brown sugar, and garlic salt and cook, stirring frequently, until toasted, about 5 minutes. Remove from the heat and set aside.
  5. Transfer the Brussels sprouts to a large serving bowl. Drizzle balsamic reduction over the top and sprinkle with the pecans and bacon.
  1. In a small saucepan, bring the balsamic to a simmer over medium heat. Simmer until reduced to 4 tablespoons, about 30 minutes. Pay attention as the reduction gets closer to the targeted amount, as it can go quickly toward the end and will burn if it gets too low. Remove from the heat and let cool.
  2. Store in a tightly covered container at room temperature if using on the same day it’s made, or store in the refrigerator for up to 2 weeks. Bring to room temperature before using to make it easier to drizzle.

How To Make Quick Beef Stir Fry

Beef contains an abundance of vitamins and minerals such as iron, B12, niacin, B6, selenium and phosphorus and meat is a complete dietary source of protein.  

Beef Stir Fry

Ingredients:

1 1/2 pounds skirt steak, cut into 4-inch-long pieces, then cut against the grain into 1/4-inch-thick slices

Salt and freshly ground pepper

1/4 cup low-sodium soy sauce

1 serrano chile pepper, seeded and finely chopped

2 teaspoons sugar

2 tablespoons freshly squeezed lime juice (1 to 2 limes)

2 tablespoons olive oil

2 cloves garlic, grated

1 bunch of scallions, thinly sliced

6 ounces fresh mushrooms, sliced

1/4 pound  snow peas or green beans

1 12-ounce can of baby corn, drained

1 red bell pepper, thinly sliced


Directions:  


  1. Season the steak with salt and pepper. In a medium bowl, whisk together the soy sauce, chile pepper, sugar and lime juice until the sugar is dissolved. Add the beef, toss to coat and set aside.
  2. In a large skillet over medium-high heat, heat the oil until shimmering, about 1 minute. Add the beef and cook, stirring, until cooked through, 3 to 5 minutes.
  3. Remove the beef from the skillet and set aside. Allow the liquid in the pan to reduce until thickened, about 4 minutes. Add the garlic and scallions and cook 1 minute more. Add the mushrooms and cook for 2 to 3 minutes more. Add the snow peas, baby corn and bell pepper and continue cooking until all the vegetables are crisp-tender, about 2 minutes. Return the beef to the skillet and toss to combine.
  4. Total Time:  30 mins  Serves:   4

How To Make Iced Coffee Concentrate At Home And Save Your Money

Having a batch of iced coffee concentrate stored away will save you lots of time, and money.  Contrary to popular belief, coffee is great for your health as it is anti-inflammatory, good for your brain, and rich in antioxidants.  

How To Make Iced Coffee Concentrate


Ingredients

1 lb. ground coffee (medium to rich roast)

8 qt. cold water

Half-and-half (healthy splash per serving)

Sweetened condensed milk (2-3 tablespoons per serving)

Note:  Use skim milk, 2% milk, whole milk, sugar, artificial sweeteners, and syrups.


Directions

  1. In a large container, mix ground coffee with water. Cover and allow to sit at room temperature for twelve hours or overnight. 
  2. Line a fine-mesh strainer with cheesecloth and set over a pitcher or other container. Pour the coffee/water mixture through the strainer, allowing all liquid to run through. Discard grounds. 
  3. Place coffee liquid in the fridge and allow to cool. Use as needed. 
  4. To make iced coffee, pack a glass full of ice cubes. Fill glass 2/3 full with coffee liquid. Add a healthy splash of half-and-half. Add 2-3 tablespoons of sweetened condensed milk (can use plain sugar instead) and stir to combine. Taste and adjust half-and-half and/or sweetened condensed milk as needed.
  5. YIELDS: 24 servings
