How To Make Healthy Vietnamese Pork Noodle Salad

Go beyond the typical boring salad and indulge in a Vietnamese Pork Noodle salad that is tasty, light and exotic.

Ingredients:

4 ounces thin brown rice noodles
1 cup sliced red onion
5 tablespoons fresh lime juice, divided
2 tablespoons fish sauce
2 teaspoons minced fresh garlic
3 tablespoons sugar, divided
1/2 teaspoon black pepper
1 pound pork tenderloin, trimmed and cut into 1-inch pieces
1/4 cup hot water
1/4 teaspoon crushed red pepper
5 ounces baby spinach (about 7 cups)
1 1/4 cups matchstick-cut carrots (4 ounces)
1/2 cup fresh cilantro leaves 2 tablespoons canola oil

Directions: 1. Bring a medium saucepan of water to a boil. Add noodles; cook 3 minutes. Drain; rinse under cold water. Drain. 2. Place onion in a bowl of ice water; let stand 10 minutes. Drain. Combine 2 tablespoons juice, 1 tablespoon fish sauce, garlic, 1 1/2 tablespoons sugar, and black pepper. Add pork; toss. 3. Combine remaining 1 1/2 tablespoons sugar and 1/4 cup hot water, stirring until sugar dissolves. Add remaining 3 tablespoons juice, remaining 1 tablespoon fish sauce, and crushed red pepper. Add noodles, onion, spinach, carrot, and cilantro; toss well. 4. Heat a wok or large skillet over high heat. Add oil; swirl. Add pork mixture; stir-fry minutes.

This dish will yield 4-6 servings.

Whenever I think of the Tuscan style of decor, the Italian countryside comes to mind with its rolling mountains, rustic farmhouses, lemon trees and lavender gardens. Tuscan decor is charming, warm and inviting, a great choice for homeowners to incorporate into their own home.

To achieve this style of decor choose elements that have the same characteristics: simple and rustic, earthy tones, and colors found in nature.

Examples of decor elements to use in the Tuscan home are: the color palette of rust, burnt orange green and white. Flooring choices are terra cotta, marble tile flooring and antique rugs. Furniture pieces should be kept simple like wrought iron, leather and wood furnishings. One of my favorite styles of home decorating is the modern shabby chic style of decor.

This style of decorating started in Great Britain predominantly in grand country houses. Shabby chic decor has evolved since then due to influences from the Swedish and French decorating culture.

Modern shabby chic is comprised of vintage and antique furniture (usually painted white), recycled old furniture and fabrics, particularly cotton and French linen with a feminine influence. Decorative items/accessories used in this style of decorating are vintage chandeliers, chenile bedspreads, patchwork quilts, floral printed tablecloths, old vases painted with roses and flea market finds such as jelly jars, milk jugs, and pie plates.

To achieve the shabby chic look in your home is easy just follow these ideas:

Bring in furniture pieces that are distressed but not damaged, good quality and preferably family heirlooms. Try painting or slipcovering your existing furniture a neutral color so the look is blended. Choose colors that are in the pastel family such as whites and creams. Curtains should have an airy breezy feeling so a gauzy type fabric is best. Flooring is left simple, usually hardwood flooring or white painted floors with a persian rug.

To complete your look add romantic accents such as roses, candlesticks, and antique picture frames.
